P2 hCG Diet Protein Veggie Recipe | Balsamic Radicchio Meatza | LSP + SP + AP
  • 7oz ground beef
  • 1/2tsp dried thyme
  • 1/4tsp salt
  • 2cups chopped radicchio
  • 1/4cup fat free chicken brothSP Option: use water instead
  • 2tbsp balsamic
  • 1/4tsp stevia extract powder
  • 1/2tsp smoked sea salt
  • 1 small shallot
  • 1tsp fresh thyme
  1. Add 1 3/4 cup radicchio to a large pan with chicken broth, 1 tbsp balsamic, stevia, shallot and smoked sea salt. Cook over medium heat, stirring occasionally, for about 8 minutes. Radicchio should be tender. Set aside.
  2. In a large bowl, mix ground beef, dried thyme and salt.
  3. Press chicken mix into an eight-inch pizza pan. Cover with plastic wrap and press again or use a rolling pin to make the chicken as flat and even as possible. Remove plastic wrap.
  4. Spread cooked radicchio over the top of crust and drizzle with any extra sauce from the pan. Sprinkle with fresh thyme then bake in a 400 degree F oven for 20 minutes, chicken crust will begin to brown.
  5. Thinly slice remaining radicchio.
  6. Remove meatza from the oven, drizzle with remaining balsamic and sprinkle with uncooked radicchio slices to add flavor and color.
Recipe Notes

– AP: Add peach slices to meatza before baking. – The recipe is written for 2 servings. If you want to cook more, you’ll need to adjust the amount of ingredients.
