Ingredients
  • 7oz small shrimppeeled and deveined
  • 2 3/4cups thinly sliced fennel
  • 2tbsp minced onion
  • 2tsp minced garlic
  • 1tbsp tomato paste
  • 2tbsp diced tomato
  • 2cups fat-free vegetable brothSP Option: use water instead
  • 2cups water
  • 1/2tsp salt
  • 1/4tsp pepper
  • 1tsp Turmeric
  • fennel fronds for garnish
Instructions
  1. Heat a large pot over medium heat.
  2. Sauté the fennel, onion, and garlic for about 5 minutes, until softened.
  3. Season with salt, pepper, and turmeric, then stir in the tomato paste and diced tomato.
  4. Slowly stir in the vegetable broth and bring to a simmer.
  5. Add the shrimp to the pot, cover, and simmer for about 5 minutes, until the shrimp are cooked through.
  6. Ladle into bowls, garnish with fennel fronds, and serve.
