P2 hCG Diet Protein Veggie Recipe | Asparagus Quiche | LSP + SP

Ingredients
  • 20 spears Asparagusthin spears
  • 2 Eggs
  • 6 Egg Whites
  • 1/2tsp salt
  • 1/2tsp ground black pepper
  • 1/4tsp nutmeg
  • 1cup fat-free vegetable brothSP Option: use water instead
Instructions
  1. Whisk eggs, whites, salt, pepper, nutmeg and vegetable broth in a bowl.
  2. Place asparagus spears in a rectangular casserole dish and pour the egg mix over the spears.
  3. Bake in a 350 degree F oven for 25-30 minutes or until quiche has set (this may take closer to 40 minutes depending on the dish you use and how deep the quiche is – if it’s thicker it will take longer, shallower, less time).
  4. Slice and serve hot.
Recipe Notes

– For AP, add nutritional yeast, tomatoes and spinach to the quiche as well. – Thinly slice half of the asparagus spears lengthwise and cover the bottom of the pan, going up the sides to make a “crust”.
