Ingredients
  • 7oz cottage cheese
  • 4cups fennelchopped
  • 2cups applechopped
  • 1/2tsp kosher salt
  • 1scoop powdered stevia
  • 4tbsp rice wine vinegar
  • 1/4cup fennel fronds
Instructions
  1. Mix vinegar, oil and salt in a bowl.
  2. Toss the apples and chopped fennel with vinegar.
  3. Place the cottage cheese in two bowls and add apples and fennel mix on top.
  4. Sprinkle with salt, pepper and fennel fronds.
Recipe Notes

– Sweeten the cottage cheese with 1 tsp swerve for a sweeter treat.

– AP option: add chopped cucumbers.
