P2 hCG Diet Protein Veggie Fruit Recipe | Chicken, Strawberry and Celery Salad | SP

Ingredients
  • 7oz chicken breast
  • 1 scoop powdered stevia1/32 per tsp
  • 2tsp Fresh Tarragonchopped
  • 1/4tsp salt
  • 1/8tsp pepper
  • 4tbsp apple cider vinegar
  • 2cups strawberrieschopped
  • 2tbsp red onionchopped
  • 3cups celerychopped
Instructions
  1. Grill chicken breast on a hot grill until fully cooked, about 6 minutes on each side.
  2. Once the chicken has cooled, cut into cubes.
  3. In a large bowl, whisk together stevia, tarragon, salt, pepper and cider vinegar.
  4. Add chicken, strawberries, onion and celery to the bowl and toss together. Serve chilled!
Recipe Notes

-This salad is best when made ahead to allow the flavors to blend together well. -The chicken may turn pink after sitting in the dressing along with the strawberries. -For an AP version, serve the salad over a bed of mixed salad greens.
