Ingredients
  • 7oz boneless skinless chicken breastcut horizontally to make 2 thin cutlets
  • Juice of 1 lemon
  • 2tsp freshly minced garlic
  • 1/2tbsp freshly chopped basil
  • 1/2tbsp freshly chopped oregano
  • 1/2tbsp freshly chopped parsley
  • 1/4tsp red pepper flakes
  • 1/2tsp salt
  • 1 lemonsliced thin
  • 2bunches Asparagustrimmed and chopped into 2-inch pieces
Instructions
  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. In a small bowl, stir together lemon juice, garlic, basil, oregano, parsley, red pepper flakes and salt.
  3. Add to a ziplock bag with the chicken cutlets. Let marinade for 1 hour, turning occasionally to make sure the chicken is well-coated.
  4. Layer lemon slices on the lined baking sheet in an even layer. Top with chicken in the center of the pan and surround with asparagus.
  5. Cook until chicken is golden and asparagus is cooked through, approximately 15 minutes.
  6. Serve immediately (and EAT the lemon slices! They are soooo good!)
