Ingredients
  • 7oz boneless skinless chicken breastthinly sliced
  • 1/2tsp freshly chopped dill
  • 1/2tsp garlic powder
  • 1/2tsp ground coriander
  • 1/4tsp salt
  • Juice from 1/2 lemon
  • 1cup diced tomatoes
  • 4cups mixed greens
  • 1/4cup thinly sliced green onion
  • 3/4cup fresh mint leavesroughly chopped
  • 1cup Cucumberthinly sliced
YOGURT DRESSING
  • Juice from 1/2 lemon
  • 1tsp white vinegar
  • 1/2tsp minced garlic
  • 2tbsp plain Greek yogurt
  • 1/4tsp salt
  • 1/4tsp freshly chopped dill
HOMEMADE QUICK-PICKLE ONIONS
  • 2/3cup medium red onionthinly sliced
  • 1/4tsp salt
  • 1/3cup apple cider vinegar
  • 5 black peppercorns
  • 1clove garlicpeeled and cut in half
Instructions
  1. To make the onions, bring 2 to 3 cups of water to a boil.
  2. In an airtight container, add salt, apple cider vinegar, and peppercorns. Stir to dissolve the salt. Set aside.
  3. Place onions in a sieve over the sink and slowly pour boiling water over the onions. Let them drain. Add onions to the airtight container. Stir to evenly distribute onion. Let stand 30 minutes, up to a handful of hours, before using.
  4. To make the yogurt dressing, combine the ingredients in a small bowl. Whisk to combine. Refrigerate until ready to serve.
  5. To make the chicken, add sliced chicken to a large bowl with freshly chopped dill, garlic powder, ground coriander, salt, and lemon juice. Toss to coat the chicken well.
  6. Heat a medium skillet over medium-high heat. Add chicken and cook until browned and cooked through, approximately 3 to 5 minutes. Remove from heat.
  7. To assemble the bowls, divide mixed greens between two large bowls. Top with equal amounts of diced tomatoes, mint leaves, cucumbers, quick-pickled onions, and chicken. Drizzle over yogurt dressing, dividing evenly between the bowls. Serve immediately.
Recipe Notes

You can easily make the quick pickled onions and yogurt dressing ahead of time. Simply store in airtight containers separately and refrigerate until ready to use.
