Ingredients
KOREAN BEEF
  • 7oz 95-99% fat free ground beef
  • 1tsp minced fresh ginger
  • 2 1/2tsp minced fresh garlic
  • 1/2tsp black pepper
  • 1/4tsp salt
  • 1/4tsp hot sauce
  • 1/4cup sliced green onion
  • 1/2tsp sesame seeds
CUCUMBER SALAD
  • 3cups sliced cucumber
  • 2tbsp diced red onion
  • 1/3cup rice vinegar
  • 2tsp minced fresh dill
  • 1/4tsp salt
  • 1/2tsp crushed red pepper flakes
AP Version:
  • 2cups cauliflower rice
Instructions
  1. To make the cucumber salad, add the ingredients to a medium bowl. Toss to coat the cucumber slices well. Cover with a plastic wrap and let rest in the refrigerator until ready to serve. add the ingredients for cucumber salad together, coat well and let rest in the fridge while cooking the rest of the dish.
  2. Heat a large skillet over medium-high heat. Add ground beef, garlic, ginger, pepper, salt, and hot sauce and cook until crumbled and cooked through.
  3. Serve the ground beef immediately with cucumber salad. For AP option, serve beef over cauliflower rice.
Recipe Notes

The longer you let the cucumber salad rest in the refrigerator in an airtight container, the more flavorful it’ll become!
