meal components: protein + veggie
Instructions
- Preheat the oven to 400 degrees F.
- In a large skillet, cook onion until softened, approximately 3 minutes. Add garlic and cook until browned, approximately 1 minute. Add chard with a splash of water. Cover and cook until chard is soft. If the skillet is too dry and the chard isn’t cooked through, add more water as necessary. Cook off any leftover moisture. Allow to cool.
- In a large bowl, whisk together eggs, egg whites, salt, parsley, basil and hot sauce. Stir in chard and onion mixture.
- Add egg mixture to a medium skillet over medium heat. Cook until the bottom and sides begin to set.
- Place in the oven and cook until the center is solid, approximately 10 to 15 minutes. Allow to cool slightly before serving. Slice into 6 wedges and serve.
Recipe Notes
*For more color and fiber, if you are okay with the very certain taste of chard, finely chop some of the stems into your frittata too!
You can easily make this frittata spicier with the addition of ¼ to ½ tsp of cayenne pepper.
