Ingredients
  • 7oz chicken breasts(100g per 3.5 oz) precooked, steamed or baked
  • ½cup oniondiced
  • ¼cup carrotsshredded – AP
  • ½cup celerydiced
  • 2cups zucchinispiralized, noodles – AP
  • 4cups chicken broth
  • 1tsp sea salt
  • ½tsp freshly ground black pepper
  • ¼tsp garlic powder
  • 1tsp Italian seasoning
  • parsley(optional garnish) Fresh, finely chopped
Instructions
  1. Heat a large pot over medium-high heat. Add the onion, carrots, and celery and sauté for 1-2 minutes, until softened. Season with the salt, pepper, garlic powder, and Italian seasoning.
  2. Add the chicken broth and bring to a simmer. Simmer for 5 minutes.
  3. While the soup is simmering, dice or shred the pre-cooked chicken breast.
  4. Stir in the chicken and zucchini noodles and simmer for an additional 2-3 minutes, until the noodles are tender.
  5. Remove from heat, ladle into a bowl, and garnish with fresh parsley.
