Ingredients
  • 7oz ground chicken(100g per 3.5oz)
  • 1/2tsp salt
  • 2cups tomatoessliced (about 3 medium tomatoes per 2 cups)
  • 1/8tsp salt
  • 1/8tsp pepper
  • 1/2tsp Italian seasoning
  • 1/4cup Simple Girl Balsamic Vinaigrette
  • 1/4cup basilchopped
Instructions
  1. Place balsamic vinaigrette in a small sauce pan and bring to a boil. Boil for about 5 minutes over low heat or until syrupy and thick. Set aside
  2. Place tomato slices on a baking tray lined with parchment or a silpat. Sprinkle with 1/8 tsp salt, pepper and Italian seasoning. Bake in a 400 degree F oven for 20 minutes or until brown spots begin to appear on tomatoes. Remove from oven and set aside.
  3. In a large bowl, mix ground chicken and salt
  4. Press chicken mix into an eight inch pizza pan. Cover with plastic wrap and press again or use a rolling pin to make the chicken as flat and even as possible. Remove plastic wrap
  5. Bake in a 400 degree F oven for 20 minutes, chicken crust will begin to brown
  6. Remove crust from oven and arrange roasted tomatoes on the top. Return to oven for 5 minutes.
  7. Remove from oven again and sprinkle with fresh chopped basil and drizzle the balsamic glaze over the top. Serve hot
