Ingredients
  • 7oz ground beef
  • 2 applescored and sliced
  • 2tsp cinnamon
  • 1/4tsp ginger
  • 1/4tsp nutmeg
  • 1/2tsp salt
  • 1/4tsp pepper
  • 4cups celeryshaved (for AP version, use only 2 cups)
  • 2tsp lemon juice
  • 1tsp nutritional yeastSP Option: do not use
  • 1/8tsp Bakto Maple Flavor
AP version:
  • 1cup shaved radish
  • 1/2cup shaved fennel
Instructions
  1. Preheat oven to 400 degrees F.
  2. In a small bowl, mix cinnamon, ginger and nutmeg.
  3. Place Apple Slices on a sheet pan on top of a non-stick baking mat.
  4. Sprinkle apple slices with half of the spice mix.
  5. Bake apples for 5 minutes, remove from oven to flip then continue to bake for 5 more minutes. Set aside.
  6. Toss shaved celery, lemon juice, nutritional yeast, 1/4 tsp salt, pepper and maple extract together and divide between two bowls. For AP recipe, also add radish and fennel together with the mix.
  7. Mix the ground beef, remaining spice mix and salt together in a medium bowl.
  8. Cook ground beef mix in a large skillet over medium heat, stirring occasionally to break up the ground beef. Cook until there is no pink left, about 8 minutes.
  9. Divide the ground beef between the bowls then top with roasted apples. Serve warm.
Recipe Notes

Maple extract is delicious in the salad portion of the recipe as it adds sweetness and a subtle fall flavor however you can skip it if needed.

Granny smith and Fuji apples are both great for roasting.

Roast one apple as directed in the recipe then grate the remaining apple and mix it into the ground beef before cooking (just another variation).
