Ingredients
  • 2cups strawberrieschopped
  • 4cups Cucumberschopped
  • 7oz cottage cheese
  • 1/2tsp ground Cardamom
  • 1/4tsp salt
  • 1 Lemon juiced
  • 6tsp drops liquid Stevia OR 1/32of powdered stevia
Instructions
  1. Mix strawberries, cucumbers, cardamom, salt, pepper and 3 drops of stevia in a bowl and set aside to marinate.
  2. In separate bowl, mix cottage cheese, lemon juice and remaining 3 drops of stevia.
  3. Divide strawberries in two bowls then divide lemon cream into each bowl as well. Serve chilled
Recipe Notes

Garnish with fresh mint leaves. Add 1/8 tsp red pepper flakes for a spicy kick. For an AP version, use half strawberries and half raspberries.
