Ingredients
  • 1cup peacheschopped
  • 3cups Cucumberspiralized into noodles or chopped
Dressing:
  • 1 ½tsp apple cider vinegar
  • 1tbsp lime juice
  • 1tbsp fresh mintchopped
  • 1tbsp fresh basilchopped
  • ½tsp Swerveerythritol or truvia
  • ¼tsp salt
Instructions
  1. Whisk together the vinegar, lime juice, mint, basil, erythritol and salt.
  2. Pour dressing over chopped cucumbers and peaches and toss.
  3. Serve chilled
Recipe Notes

Add 4 strawberries to the dressing and puree in a food processor for an even more ‘mojito’ flavor.

Leave the skin on the cucumbers.

Make a complete meal with protein by adding 3.5 oz of grilled chicken per serving.
