Ingredients
  • 2tbsp chopped onion
  • 3cups chopped celery
  • 1tbsp garlic
  • 7oz chicken
  • 2cups fat free beef brothSP: use water instead
  • 2cups water
  • 2tbsp hot sauce
  • 1tsp white vinegar
  • tsp cayenne
  • tsp paprika
  • ¼tsp salt
  • tsp pepper
Instructions
  1. Saute chopped onions and celery with a splash (about ¼ cup) beef broth. Cook until onions are translucent and celery is soft (about 5 minutes).
  2. Add garlic and cook another minute.
  3. Place chicken, broth, cooked onions and celery in a slow cooker.
  4. In a separate bowl, whisk together hot sauce, white vinegar, cayenne, paprika, salt and pepper. Pour mix into slow cooker as well.
  5. Cook on low for 3-4 hours.
  6. Shred chicken with two forks
  7. Remove about 1 ½ cups of soup into a blender, including some chicken. Puree until smooth and add back into soup.
  8. Serve hot
Recipe Notes

Great Instant Pot recipe! Saute onions, garlic and celery in pot. Add remaining ingredients and use Instant pot soup button to cook for 10 minutes.

If making AP, add a little greek yogurt to make the soup creamier.
