hCG Diet Phase 2 Turkey Recipe | Ratatouille Meatza – AP

Ingredients
  • 7oz ground turkey or chicken
  • 1/4tsp salt
  • 2tbsp fat free chicken broth
  • 1/2cup diced zucchini
  • 1/2cup diced red onion
  • 2tbsp sliced garlic
  • 1cup canned diced fire roasted tomatoes
  • 1/4tsp salt
  • 1/8tsp pepper
Instructions
  1. In a large skillet over medium, heat the chicken broth and add zucchini, red onion and garlic. Sauté for 5 minutes to soften.
  2. Add canned tomatoes and season with salt and pepper.
  3. Simmer mixture for 10-15 minutes or until tomato mix has cooked down and is not water but not thick like a paste- sauce consistency.
  4. In a separate bowl, mix ground turkey and salt.
  5. Press turkey mix into an eight inch pizza pan. Cover with plastic wrap and press again or use a rolling pin to make the turkey as flat and even as possible. Remove plastic wrap
  6. Bake in a 400 degree F oven for 20 minutes, chicken crust will begin to brown
  7. Remove crust from oven and spread ratatouille sauce over the pizza and almost to the edge, leaving a 1/2 inch gap with no sauce.
  8. Return to oven and bake for about 6 minutes to heat the pizza and slightly brown the veggies.
  9. Serve hot
