Ingredients
  • 4cups cauliflower florets
  • 2whole hardboiled eggschopped
  • 6 hardboiled egg whiteschopped
  • 2tbsp minced red onion
Dill Yoghurt Dressing
  • 1/2tbsp apple cider vinegar
  • 1/4cup plain non-fat Greek yogurt
  • 1tsp fresh chopped dill
  • 1tsp freshly chopped chives
  • 1/2tsp fresh lemon juice
  • pinch Swerve
  • 1tsp salt
  • 1/4tsp black pepper
  • 1/2tsp paprika
Instructions
  1. Steam the cauliflower over the stove, or microwave in a large bowl with 2 Tbsp of water for 10 minutes, stirring halfway through. If you microwave the cauliflower, be sure to drain it before using it it the salad.You can also cook in the instant pot, with the grill and a little water on the bottom, for 2 minutes on high manual pressure.
  2. In a small bowl, whisk together apple cider vinegar, Greek yogurt, dill, chives, lemon juice, Swerve, salt, black pepper, and paprika, until smooth.
  3. Add cauliflower, onion, and egg to a large bowl with the dressing. Stir to combine. Serve immediately or chill in the refrigerator until ready to serve.
Recipe Notes

You can easily make a double or triple batch of this salad to use throughout the week for lunches.

If you like your fauxtato salad spicy, consider adding in ΒΌ tsp cayenne pepper.
