Ingredients
  • 2tbsp red onionthinly sliced
  • 2tbsp roughly chopped ginger
  • 2tsp minced garlic cloves
  • 2cups chicken brothSP: use water instead
  • 2cups water
  • 4cups celerythinly sliced
  • 1/2tsp black pepper
  • 2tsp Herbes de Provence
  • 7oz boneless skinless chicken breastcooked and shredded
AP option:
Instructions
  1. In a large saucepan over medium heat, cook onion, garlic and ginger for 1 to 2 minutes, until the onion has softened.
  2. Add chicken broth, celery, black pepper, and herbes de provence. For AP, add carrots.
  3. Bring to a boil, then reduce to a simmer. Cook until the vegetables are tender, approximately 15 to 20 minutes. Add chicken to the pan. For AP, add noodles. Cook until heated through.
  4. Serve immediately.
