Ingredients
  • 4tbsp Walden Farms Russian Dressing
  • 7oz deli ham(100g per 3.5 oz) NO SUGAR ADDED, sliced thin – AP
  • 6tbsp Sauerkrautfresh probiotic type best!
Quick Pickled Cucumber:
  • 1 Cucumber
  • 1tbsp salt
  • 1.5cups water
  • 1/2cup white wine vinegar
  • 1/2scoop powdered stevia* (1/64 tsp per 1/2 scoop)
  • 1 bay leaf
  • 1/4tsp allspice
Instructions
  1. Pickle the cucumbers first: Thinly slice cucumbers, using a mandolin if possible to make very thin slices. Place in a bowl and add salt, toss to combine and let sit for 30 minutes
  2. Bring water, vinegar, stevia powder, bay leaf and allspice to a boil then allow to cool.
  3. Rinse cucumbers then pour water/vinegar mix into bowl with cucumbers. Cover and refrigerate for at least 3 hours before using.
  4. Heat ham by wrapping in aluminum foil along with 2 tbsp water. Steam in 350 degree oven for 10 minutes.
  5. Toss ham in a large bowl with sauerkraut, pickles, and Russian dressing. Coat thoroughly.
  6. Serve while warm!
Recipe Notes

If you would like a neater presentation, spread dressing on ham directly then lay on plate and layer with homemade pickles and sauerkraut

Pickles in this recipe are a great snack so make a double batch

Serve on top of one melba toast for an open faced, crunchy Reuben sandwich (use some of the pickle juice to soak the melba toast for a more acidic treat)

*This is based on the Trim Healthy Mama stevia brand that I personally use and linked to in the recipe which is quite concentrated. Stevia potency really varies from brand to brand so you may need to adjust the level of stevia to more or less depending on which one you use.
