Ingredients
For the meatballs:
  • 7oz ground beef(100g per 3.5 oz) lean
  • 1tsp garlicminced
  • 2tbsp onionminced
  • 1/2tsp salt
  • 1/4tsp pepper
For the soup:
  • 2cups green cabbageroughly chopped
  • 2cups fat free beef brothSP Option: use water instead
  • 1cup water
  • 1tbsp tomato paste
  • 1tbsp apple cider vinegar
  • 1/2tsp oregano
  • 1/2tsp smoked paprika
  • 1/2tsp salt
  • 1/2tsp pepper
Instructions
  1. Combine the ground beef, minced garlic, minced onion, salt, and pepper in a bowl and mix well.
  2. Scoop the beef mixture by the tablespoonful and roll into balls. Should make about 16 total for a 2 serving recipe.
  3. Heat a large pot over medium-high heat and add 3 tbsp of water or broth.
  4. Cook the meatballs, stirring often, until browned on all sides. Add liquid as necessary to prevent burning. AP: You may choose to brown meatballs with a few sprays of coconut oil.
  5. Reduce heat to medium-low, add the cabbage to the pot, and sauté for 2-3 minutes, until slightly wilted.
  6. Season with the oregano, smoked paprika, salt, and pepper.
  7. Stir in the tomato paste, apple cider vinegar, beef broth, and water. Mix well and bring to a simmer.
  8. Simmer for 10-15 minutes.
  9. Remove from heat, ladle into bowls, and enjoy.
